Ingredients

  • 1 GoWELL Wrap

  • 2 eggs

  • 2 tbsp milk

  • 1/4 cup black beans - drained

  • 1/4 cup cooked rice

  • 2 tbsp GoMEX MexiSalsa

  • 1 tbsp crumbled feta

  • 1 tsp oil

  • Salt & pepper

Preparation

  1. Whisk together eggs, milk, salt & pepper.
  2. In a large frying pan on a high heat add oil.
  3. Pour in egg mixture and turn heat down to low.
  4. Mixture will start to bubble and a crust will form on the edges, gently flip egg and cook for another 2 mins, take off the heat and set aside.
  5. Heat wrap as per packet instructions.
  6. Evenly spread GoMEX MexiSalsa over wrap, place egg on top then top with rice, black beans and feta.
  7. Folding each side of the wrap into the middle first then rolling from the base up.
  8. Wrap in sandwich paper and alfoil to keep warm.
