  • 500g mince, tofu or ready to use shredded beef, chicken or pork

  • 1 cup refried beans

  • GoMEX enchilada sauce

  • ½ onion diced

  • 1 large clove garlic diced

  • 1-2 tbsp diced jalapeños (optional)

  • Mixture 4 cups mixed lettuce, ½ cup thinly sliced radishes and shredded purple cabbage

  • Olive oil to brush tortillas and 2 tbsp to cooked onions and garlic

  • 1 avocado diced

  • ½ cup thinned sour cream

  • SALSA:

  • 2 cups diced tomatoes

  • ½ white or red onion finely diced

  • 2 tbsp diced jalapeños

  • 1 lime juiced

  • 1/2 cup chopped coriander

  • 1/2 cup chopped coriander

Tip: Cook the wraps in 6”-7” pie tins to create raised edges.


  1. Pre heat oven to 180°C fan forced.
  2. Brush the wraps with oil.
  3. Cook for 6-8 mins or until lightly golden on oven racks adjusted in middle of oven. Set aside.
  4. Repeat with remaining wraps. Set aside.
  5. Cook onion and garlic in oil until opaque.
  6. Add in mince, tofu or pre-cooked shredded meat and jalapeños. Cook till mince and tofu is browned or pre-cooked shredded meat is heated through.
  7. Add enchilada sauce and simmer for 15 mins.
  8. Stir in the refried beans. Set aside to cool down prior to adding to salad.
  9. To assemble, add the following onto each tostada:
  10. Place mixed lettuce, radish & cabbage, mince/bean mixture.
  11. Finish with diced avocado. drizzle with sour cream & salsa.
