Ingredients

  • 500g lamb strips

  • 1/2 brown onion

  • 2 tsp crushed garlic

  • 1 tbsp oil

  • For the filling

  • 400g tinned artichokes

  • 4 tomato's

  • 1/2 red onion

  • 1 small cucumber

  • Tzatziki

  • 1/2 cup yogurt

  • 5 mint leaves

  • 1 tsp lemon juice

Preparation

  1. Heat a large frying pan, until very hot and add oil.
  2. Add lamb strips, cook fro 2 mins then add sliced brown onion and garlic.
  3. Remove from heat and set aside.
  4. To prepare fillings, dice tomato, red onion and cucumber.
  5. Drain artichokes and cut into quarters.
  6. To prepare tzatziki, finely slice mint leaves then combine with yogurt and lemon juice.
  7. Heat tortilla's as per packet instructions.
  8. Fill each tortilla with lamb, filling and top with tzatziki.
