Ingredients

  • ¼ cup tomato tapenade or pesto

  • 400g grilled breast chicken cut in wide strips

  • 1 red capsicum cut in thin strips

  • 50g shaved parmesan cheese

  • 50g whole pitted olives

  • 200g rocket leaves

  • balsamic vinegar

  • olive oil

  • salt and pepper to taste

  • Note: For a gluten free version of this dish use GoWELL Glute Free Wraps.

Preparation

  1. Toss all ingredients minus tapenade/pesto into a bowl, drizzle with olive oil and balsamic vinegar and season to taste.
  2. Toss all the other ingredients into a bowl, drizzle with olive oil and balsamic vinegar and season to taste.
  3. Heat the wrap as per instructions on pack.
  4. Spread tapenade or pesto evenly on each wrap and place filling down centre of wrap and roll to encase fillings.
  5. Cut in half to serve or for school lunches, wrap in glad wrap folding ends inward half way through wrapping.
