Mango Salsa on Corn Chips

  • Oil for deep frying

  • 3 ripe mango's

  • 1/2 red chilli

  • 1/2 bunch coriander

  • 1/2 red onion

  • 2 limes

Tip: This recipe also goes really well with pork and fish


  1. Preheat deep fryer or pot of oil to 180 degrees.
  2. Cut tortilla's into 6 triangles, deep fry in small batches fro 3 - 4 min or until golden brown, drain off excess oil on paper towel and season with crispy seasoning mix. Set aside to cool.
  3. Peel mango's and remove cheeks. Curt into 2cm squares.
  4. Remove seeds form chili, slice very finely.
  5. Slice red onion finely.
  6. Pick coriander leaves.
  7. Combine all ingredients together with sweet chili sauce.
  8. Serve chilled with lime wedges.
