Mexican Chicken Wrap

Ingredients

  • DRESSING:

  • 1 tbsp ground cumin

  • 1 tsp paprika

  • 2 tbsp lime juice

  • 2 tsp grated lime peel

  • ¼ tsp Tabasco (more if you like heat)

  • 2 tbsp sour cream or whole egg mayonnaise


  • FILLING:

  • 500g diced cooked chicken breast

  • ½ cup chopped coriander

  • ¼ red onion diced

  • 1 ripe tomato diced

  • 4 radishes thinly sliced

  • 1 medium avocado diced

  • 1 cup finely shredded cabbage

  • 3 cups spinach leaves (stems removed)

Preparation

  1. Whip together dressing ingredients.
  2. Place all fillings into a bowl and mix with dressing.
  3. Heat wraps as per instructions on pack, place one portion of the dressed filling down the centre of each wrap and fold to encase fillings.
  4. Cut in half to serve or for school lunches, wrap in glad wrap folding ends inward half way through wrapping.
