Minestrone Soup

Ingredients

  • 2 GoMEX Enchilada Sauces

  • 1 tbsp oil

  • 3 rashes of bacon

  • 2 sticks of celery

  • 2 carrots

  • 1 tsp garlic

  • 400g cannellini beans - drained

  • 500ml beef stock

  • 1/4 cup chopped parsley

Tip: Soup can be made prior and stored refrigerated in an airtight container for 2-3 days.

Preparation

  1. Slice bacon into batons.
  2. Dice celery and carrots into 1cm cubes.
  3. Heat a heavy based pot on medium to high heat, add oil.
  4. Cook bacon for 4-5 mins or until bacon is slightly crispy.
  5. Add celery, carrots and garlic and cook for a further 4 mins.
  6. Add stock and bring to the boil, reduce heat and simmer for 5 mins.
  7. Add Enchilada sauce and cannellini beans bring back to a simmer for a further 5 mins.
  8. Remove from the heat, stir through parsley.
