Mini Chicken & Avocado Quiche

  • 300g cooked shredded chicken

  • 450ml cream

  • 3 eggs

  • 1 avocado - diced

  • 1/2 bunch chives - sliced finely

  • 200g salsa

  • Salt and pepper to taste

Tip: Quiche's can be made the day before and stored in the refrigerator for 2-3 days, perfect for school lunches


  1. Preheat oven to 150 degrees.
  2. Grease a muffin tray with oil.
  3. Heat tortilla's as per packet instructions then make a cut in each tortilla from the middle to the edge.
  4. Fold each tortilla over itself and gently push into each muffin tray mould.
  5. Par bake in oven for 3 mins or until base of tortilla is slightly hard, set aside still in muffin tray.
  6. Whisk together eggs, cream and salt & pepper until combined.
  7. Evenly distribute chicken and half the avocado into each tortilla basket, top with chives and pour in cream mixture.
  8. Sprinkle over crispy crumb seasoning and bake for 8-10 mins.
  9. Let quiche cool slightly in muffin tray, then top with salsa and remaining avocado.
