Mini Mexican Pizza

  • 500g beef mince

  • 1 brown onion - diced

  • 2 tsp crushed garlic

  • 2 tbsp oil

  • 400g tinned black beans - drained

  • 1 red capsicum - seeds removed and diced

  • 250g grated mozzarella cheese

  • 120g diced fetta

Tip: Pizza's can be made the day before and packed in school lunches.


  1. Preheat oven to 180 degrees.
  2. In a frying pan, heat oil and cook onions and garlic until translucent.
  3. Add beef mince and cook for 5 mins or until meat has browned and cook through, set aside.
  4. Place each tortilla onto a greased baking tray.
  5. Evenly spread enchilada sauce onto each tortilla.
  6. Top each tortilla with grated cheese, mince, capsicum and black beans.
  7. Top with diced feta cheese.
  8. Bake for 12 mins or until cheese has melted and feta forms a light crust.
  9. Serve straight from the oven.
