  • Blue Corn Tortilla's (Direct Supply from Diego’s or use Diego’s GoMEX Tortillas)

  • Tomato Tortilla (Direct Supply from Diego’s or use Diego’s GoWELL Tortillas)

  • 1 tomato diced

  • 2 jalapeno's diced

  • 2 tbsp Mexican oregano

  • 1 tbsp sea salt flakes

  • 300g grated cheddar cheese

  • 150g grated mozzarella cheese

  • 1 tbsp plain flour

  • 1 chorizo sausage (skin removed)

  • 1 brown onion diced

  • 1 cup lager

Tip: You can serve this dish with blue corn chips or tomato corn chips instead of corn tortillas.


  1. Mix tomato, jalapenos, oregano and salt in a small bowl.
  2. Mix both cheeses and flour in a bowl.
  3. Cook chorizo in a medium saucepan breaking up with a wooden spoon.
  4. Add onion and cook for a further 5 min.
  5. Transfer chorizo and onion into a small bowl.
  6. Return pot to the stove and add beer, bring to the simmer.
  7. Add cheese mixture in small batches and whisk until cheese has melted.
  8. Stir in chorizo and onion.
  9. Transfer to a hot skillet and top with tomato salsa.
