Queso Fundido

A tasty dip perfect for those taco nights

  1. Mix tomato, jalapenos, oregano and salt in a small bowl.
  2. Mix both cheeses and flour in a bowl.
  3. Dice chorizo and onion.
  4. Cook chorizo and onion in a medium saucepan with a tablespoon of oil.
  5. Cook until onion is soft
  6. Transfer chorizo and onion into a small bowl.
  7. Return the pot to the stove and in the left over oils add the flour.
  8. Once foaming pour in the beer.
  9. Add cheeses in small batches and whisk until cheese has melted.
  10. Stir in chorizo and onion.
  11. Transfer to a hot skillet and serve with either corn chips, or in a warm flour tortilla/wrap with fresh salsa.
  1. 1 pk of Diego's classic wraps or Diego's Corn Tortillas (to make corn chips)

  2. 2 tomato diced

  3. 2 jalapeños diced

  4. 2 tbsp oregano

  5. 1 tbsp sea salt flakes

  6. 300g grated cheddar cheese

  7. 150g grated mozzarella cheese

  8. 3 tbsp plain flour

  9. 1 chorizo sausage (skin removed)

  10. 1 brown onion diced

  11. 350 ml cup lager

Tip: You can serve this dish with blue corn chips or tomato corn chips instead of corn tortillas.
