Shredded Beef Tostada

  • 500g shredded beef

  • 300g enchilada sauce

  • 400g black beans drained

  • 100g crumbled feta

  • 100g roasted capsicum strips

  • Coriander to garnish

Tip: Use shredded pork as an alternative to beef.


  1. Combine shredded beef, enchilada sauce and black beans in a large pot and simmer on the stove for 10 min.
  2. Heat a small frying pan sprayed with oil and cook tortilla on each side for 2 min or until crispy.
  3. Top with shredded beef mixture, capsicum strips, feta and garnish with coriander.
