Spicy Mexican Beef Soup

  • 4 tbsp oil

  • 500g chuck steak diced

  • 1 brown onion

  • 1 tsp crushed garlic

  • 1 tsp ground cumin

  • 1 tsp ground coriander

  • 1 red capsicum

  • 1 yellow capsicum

  • 400g black beans - drained

  • 300g GoMEX Enchilada Sauce

  • 1.5L beef stock

  • 1/2 cup chopped coriander

Tip: Soup will increase in flavour if made the day before, stored in the refrigerator in an airtight container. Reheat over a medium heat stirring consistently.


  1. Heat a large heavy based pot to high heat, add half the oil.
  2. Add meat and cook until browned, transfer to a bowl and set aside.
  3. Dice onions and capsicums into small cubes.
  4. Return pot to the stove on medium heat, add remaining oil.
  5. Add onions, garlic, dried spices, MexiSauce and cook for 3-4 mins until aromatic.
  6. Return meat to the pot, add enchilada sauce and stock.
  7. Bring to the boil, reduce heat to low and simmer gently for 1 hour.
  8. Add capsicum and simmer for another 10 mins.
  9. Add beans and simmer for another 5 mins.
  10. Remove from heat and stir in coriander.
