Taco’s or Tostada’s

Ingredients

  • 500g shredded beef

  • 300g enchilada sauce

  • 400g black beans drained

  • 100g crumbled fetta

  • 100g roasted capsicum strips

  • Coriander to garnish

  • Lime wedge to garnish


Tip: You can substitute beef with shredded pork.

We used Diego's blue corn and tomato tortillas instead of plain corn tortillas (Contact Diego's directly for blue corn and tomato tortillas).

Preparation

  1. Combine shredded beef, enchilada sauce and black beans in a large pot and simmer on the stove for 10 min.
  2. For the Taco's, heat tortilla's in a sandwich press sprayed with oil until steam escapes.
  3. Fill taco's with shredded beef mixture, top with half the capsicum strips, fetta and garnish with coriander and lime.
  4. For the Tostada's, heat a small frying pan sprayed with oil and cook tortilla on each side for 2 min or until crispy.
  5. Top with shredded beef mixture, capsicum strips, fetta and garnish with coriander and lime.
