Lower Carb Fish Taco

Prep: 20 minutes Cook: 10 minutes Serves 4-8 People

Ready. Steady. Cook!

A light and healthy dinner, ready within 30 minutes and sure to satisfy the whole family!

  1. Mix together all ingredients for the marinade.
  2. Rub the marinade onto the fish. Let sit.
  3. Mix corn salsa ingredients together.
  4. Prepare the guacamole by smashing the avocados and mix with the rest of the ingredients.
  5. Spray a preheated pan with some oil and grill the fish on both sides until well cooked.
  6. Heat up wraps as per packet instructions.
  7. Assemble tacos with the lettuce first, then guacamole, then fish and finish with the corn salsa.
  1. 4 x Diego’s Sourdough Wraps

  2. 4 x Fish fillets (we used snapper)

  3. 1 bunch of coral lettuce

  4. Marinade:

  5. 1 tsp of achiote paste

  6. ½ a lemon rind

  7. 2 tbsp. of olive oil

  8. Salt and pepper to taste

  9. ½ a tsp of smoked paprika

  10. Corn salsa:

  11. Corn kernels from one 1 corn cob

  12. ½ cup parsley, chopped

  13. 1 cup kale, chopped

  14. ½ cup sliced shallots

  15. 1 x lemon juiced

  16. 1 tbsp olive oil

  17. Salt and pepper to taste

  18. Guacamole:

  19. 2 x avocados

  20. Salt and pepper to taste

  21. ½ cup coriander, chopped

  22. 2 tbsp of lime juice

  23. 1 mild green chilli de seeded and chopped finely.

Tip: Great for diabetics due to the lower carbs and sugars.
Raw corn will give a bit of crunch but if you prefer cooked corn you can easily grill on a pan or bbq until lightly charred.
