Ready. Steady. Cook!
A light and healthy dinner, ready within 30 minutes and sure to satisfy the whole family!
- Mix together all ingredients for the marinade.
- Rub the marinade onto the fish. Let sit.
- Mix corn salsa ingredients together.
- Prepare the guacamole by smashing the avocados and mix with the rest of the ingredients.
- Spray a preheated pan with some oil and grill the fish on both sides until well cooked.
- Heat up wraps as per packet instructions.
- Assemble tacos with the lettuce first, then guacamole, then fish and finish with the corn salsa.
4 x Diego’s Sourdough Wraps
4 x Fish fillets (we used snapper)
1 bunch of coral lettuce
Marinade:
1 tsp of achiote paste
½ a lemon rind
2 tbsp. of olive oil
Salt and pepper to taste
½ a tsp of smoked paprika
Corn salsa:
Corn kernels from one 1 corn cob
½ cup parsley, chopped
1 cup kale, chopped
½ cup sliced shallots
1 x lemon juiced
1 tbsp olive oil
Salt and pepper to taste
Guacamole:
2 x avocados
Salt and pepper to taste
½ cup coriander, chopped
2 tbsp of lime juice
1 mild green chilli de seeded and chopped finely.
Tip: Great for diabetics due to the lower carbs and sugars.
Raw corn will give a bit of crunch but if you prefer cooked corn you can easily grill on a pan or bbq until lightly charred.
